Ricotta & Ham CrumpetsThis past summer we made our way down to Seattle and took a cruise up to Alaska. The best part of Seattle, nay the whole trip, was Pike Place Market, and at this special wonderland we found ourselves at The Crumpet Shop. A place where you wish you can make your stomach grow at least three sizes. Unfortunately that is not an option so it was with sadness that we left knowing that the delicious crumpets would be about 12 hours away. Just a short car ride away. So these crumpets are inspired by what we ate there, an excellent substitution until we find ourselves back in Seattle.

  • 1 pkg. crumpets (includes 6)
  • 12 slices deli ham
  • 6 Tbsp. Butter
  • 6 Tbsp. Ricotta Cheese
  • 3 Tbsp. Sun-dried tomato pesto
  • 12 slices tomato

1. Toast crumpets and immediately spread each with 1 Tbsp. butter. You want it to melt into all the nooks and crannies.

2. Top each hot buttered crumpet with 1 Tbsp. Ricotta cheese, 1/2 Tbsp. pesto, 2 slices tomato, and 2 slices ham.

3. Eat and enjoy!
